This is my favourite salad to make because it’s a good way to use up what is in the fridge, and it’s tasty!
1 cup quinoa
Vegetable stock (read the directions for how much to add)
1 package of feta cheese (I prefer goat)
1 red, orange or yellow bell pepper
1/2 cucumber
1/4 red onion
1/4 cup cilantro (or dill if you prefer)
1 handful of spinach or kale leaves
Fresh pepper
Lemon or olive oil
Other things I like to add are matchstick carrots, kalamata olives, or small pieces of broccoli (pictured).
Chop the veggies as chunky or fine as you like, and toss in light olive oil or lemon juice.
I cook my quinoa in vegetable stock to give it flavour, then chill it in the fridge before adding it to the salad.
Mix it all together with some cubes of feta and pepper and serve. Yum!
