Sushi is way easier to make than you may think!
I know I have definitely tried in the past and failed miserably, but today was a success.
We started by rinsing 2 cups of Organic California Sushi Rice (made by Lundberg) until the water ran clear, then adding it to a pot with 2 cups of cold water to sit for 20 mins. Following the soak we brought the rice to a boil for a minute (with the lid on) and then let it simmer on low for 20 minutes (don’t peek!)
While the rice cooked we roasted some yams and teriyaki chicken (for J), and chopped up some avocado, mango and a block of cream cheese.
After the rice was cooked we took it off the heat and let it sit for 10 minutes, mixing in a capful of white wine vinegar and a capful of Kikkoman Mirin Style Sweet Cooking Seasoning.
Then we got out the awesome sushi mat I just made and laid out the rice with a sheet of Sushi Nori Roasted Seaweed and rolled it all together with the fillings. Sprinkle some sesame seeds on top and you’re ready to stuff your face! The first pic is of mango, avocado and cream cheese, and the image at the bottom is roasted yam, avocado and cream cheese. YUMMMM
