Chai cupcakes! Have you got a copy of Vegan Cupcakes Take Over the World? Well, you should get one. I adapted this recipe to be GF, and used a vegan buttercream frosting with a sprinkle of my chai mix (recipe here) for the tops. So good. Here is the recipe for the frosting so you can make your own, I love it.
Vegan Buttercream Icing
1/2 cup non hydrogenated shortening
1/2 cup earth balance (or non hydrogenated margarine)
1 1/2 tsp vanilla extract
1/4 cup soy milk
3 1/2 cups icing sugar
Whip margarine and shortening together until fluffy, add icing sugar and blend for a few minutes. Add vanilla extract and gradually add soy milk until frosting is light and fluffy. Ta da!
