We harvested some rhubarb! The leaves were getting huge and overshadowing everything else in the vicinity so we cut the plants back. All you have to do is leave 2 stems on a plant for it to keep coming back, and a rhubarb plant can apparently live for 20+ years. We will have rhubarb foreverrrrr!
We are looking for rhubarb recipes, and so far have made the compote to try these little sandwich cakes. I’ve also got a recipe for a rhubarb cake that I’ve made in the past that is excellent. More to come later!
