I am patiently waiting for our two apple trees to finish ripening, but in the meantime have been hoarding apples from all over and making apple smash.
(L to R) Berry Point Farms, Gabriola, BC “Paula Red” Apples ($4 for 3lb bag, made 4 x 250ml jars), Apples from our lovely neighbour Molly’s yard (made 5 x 250ml jars), Apples from Oliver, BC ($7.99 for 5lb bag from Thrifty’s, 3lbs made 4 x 250ml jars)
Apple smash is really easy to make, you just chop up your apples and remove the core/seeds. I leave the skins on, which is where the great colour comes from! Fill a pot with apple pieces and add some water (like 1 or 1-1/2 cups) and juice from 1 lemon (optional, but I like it). Boil until the apple has broken down and use a hand blender to puree. Ladle it into sterilized jars and can in a hot water bath for 15 minutes. Bingo bango.
If you have one of these science fiction masher/strainer devices they are also awesome! This one is Leanna’s, which we used when we made granny smith apple smash from apples collected at J’s work a few weeks back.
