It’s getting super hot around here so it’s time for ice cream! We bought a Cuisinart ice cream maker from someone on the island last fall and broke it in with a batch of dark chocolate sorbet that was really, really delicious. Plus it’s vegan and only has 5 ingredients ❤
3 cups water
1-2/3 cups granulated sugar
pinch salt
1-2/3 cups cocoa powder
1 teaspoon pure vanilla extract

Heat the water, sugar and salt on the stove to make a simple syrup using medium to low heat. Once the sugar is fully dissolved sift in the cocoa powder gradually until smooth, then add the vanilla extract.
Place mixture in a bowl in the fridge for 2-3 hours to cool, then load into your ice cream maker. Churn until creamy, about 20 minutes. (Above photo is the start of the churning process, photo below is when it is ready)
I then divided the sorbet into mason jars and quickly transferred them to the freezer. Delicious dark chocolate sorbet in a reusable container! I don’t know about you but I’m going to be eating this all summer long.
