Vegan Nacho Cheese!

10_01_2015_02Vegan and, dare I say it, healthy nacho cheese?? I’ve been browsing a lot of Pinterest lately and came across this little gem a few days ago and though I’d give it a try. Wowie is it ever tasty!! I am super impressed by the consistency and even more impressed that it’s made with potatoes, carrots, and nutritional yeast. Check out the original post here ❤

10_01_2015_09Vegan Nacho Cheese

2 cups mashed potatoes (peeled, boiled, smashed)
3/4 cup carrots (peeled and boiled)
1/2 cup nutritional yeast
1/3 cup extra virgin olive oil
1/3 cup water
1 tablespoon lemon juice
1-1/2 teaspoons salt

10_01_2015_08 10_01_2015_07Boil the potatoes and carrots until they are soft enough to prick with a fork. Strain out the water and toss them into a high-speed blender with the rest of the ingredients and blend until smooth (I have a Ninja and it is awesome). Serve warm as a dip or drizzled over nachos. I like these super tasty Food Should Taste Good blue corn chips (or their multigrain flavour!)
