Raw Vegan Key Lime Pie

It’s raw. It’s vegan. It’s maybe a little healthier than a regular pie. And it only takes minutes to make. You can’t lose! I found the recipe over on Healthy Blender Recipes and it’s super easy.

Raw Vegan Key Lime Pie

Crust:

2 cups raw cashews
1 cup pitted dates
1/2 cup shredded coconut
Pinch of salt

Filling:

1 large avocado, pitted
1/2 cup melted coconut oil
1/2 cup agave syrup
1 tablespoon lime zest
1-1/2 cups raw cashews, soaked at least 2 hours
1/4 cup lime juice
1 tsp vanilla extract
Pinch of salt

Blend all the crust ingredients in a food processor for several minutes until finely blended. Press into the base of a spring form pan lined with parchment paper or greased really well with coconut oil.

Blend all the ingredients of the filling on high in your blender or food processor until silky smooth with no chunks remaining. Using a rubber spatula pour the filling onto the crust, spreading evenly with spatula. Cover with saran wrap and pop into the freezer for a few hours, transferring to the fridge an hour before serving. THAT’S IT.
