Vegan Chocolate Crackle Cookies

What do you do when you have a chocolate craving at 10pm but no junk food in the house? Bake cookies, of course! This recipe is from vegan genius Isa Chandra Moskowitz and her book Vegan Cookies Invade Your Cookie Jar (which I highly recommend!)

Chocolate Crackle Cookies

Cookies:
3/4 cup sugar
1/3 cup canola oil
2 tablespoons corn syrup
1 tsp pure vanilla extract
1/3 non-dairy milk
1 tbsp ground flax seeds
1/2 cup chocolate chips, melted
1-1/2 cups all purpose flour
2 tbsp cocoa powder
1 tsp baking powder
1/4 tsp salt

To Roll in:
1 cup powdered sugar
1/4 cup sugar

Preheat oven to 325ΒΊF and line two baking trays with parchment paper.

In a large bowl mix together sugar, oil, corn syrup, vanilla, milk, flax seeds, and melted chocolate until smooth. Add flour, cocoa powder, baking powder and salt and mix until a thick dough forms.

Shape into balls about 1.5″ across and roll through the sugar mixture until thickly coated. Place onto parchment lined sheet and bake for 10-12 minutes when the surface begins to crack.

Allow to cool on a rack for a few minutes or eat right away if you are desperate. These cookies are really soft and tasty! If you want the cookies to be darker you can use a dark corn syrup (I only had light on hand) and a black cocoa powder to make a dark cookie base with more contrast in the sugary crackled surface. It all tastes the same in the middle of the night though ❀

    • Most cookies (and baking in general) include butter, eggs, and milk, but vegans don’t eat anything that comes from an animal so vegan cookies use substitutes for those things. Vegetarians don’t eat meat, but often still eat eggs and dairy. Most of my recipes are vegan because I try to eat all plant based foods πŸ™‚
