We had lots of apples this year so I took a look for different ways to use them up. Last year I made apple smash (a lot of it) out of our apples and canned it for later use, but then didn’t end up eating very much. I wanted to make some more recipes this year that didn’t involve preserving, and I came up with a vegan apple pie, of course apple juice, and also vegan apple crisp.
Vegan Apple Crisp
Filling:
6-8 apples, peeled, cored and chopped
1/3 cup brown sugar
1/3 cup organic cane sugar
1/4 apple juice
1 tablespoon corn starch
2 tablespoons chai spice mix
Topping:
1 cup rolled oats
1 cup all purpose flour
1/2 cup brown sugar
1 tsp baking powder
1 tablespoon chai mix
1/3 canola oil
3 tablespoons non-dairy milk
1 tsp pure vanilla extract
Chai Spice Mix:
1 tbsp ginger powder
1 tbsp cardamom seeds
1/2 tsp ground nutmeg
3/4 tsp ground cloves
3/4 tsp ground black pepper
1-1/2 tbsp ground cinnamon
Preheat oven to 350ΒΊF. In a medium sized bowl mix the sugar, cornstarch, and spices to blend evenly. In a large glass baking dish add the apples and apple juice, the toss in the sugar mixture.
In a separate bowl mix together the oats, flour, sugar, baking powder and chai spice. Gradually add the canola oil, non-dairy milk, and vanilla extract until mixed well. Crumble the topping over the apples and bake in the oven for about 45 minutes, or until it bubbles and browns on the top. Pretty easy!!

Are you another Stephanie?? I go by my middle name as well, which is Taylor, because there are SO MANY STEPHANIES. At my work there were like 6 Stephanie’s working at the same building and it was too confusing, so I started going by Taylor instead.
Are you an 80s baby? Bc that explains the plethora of Stephanies. I go by Steph most of the time…my middle name is Elizabeth so I didn’t use that. There aren’t ever many Stephanies around me, unless I’m somewhere where a lot of people my age are. It was a top baby name in 83-89. I got stuck with it, and I hated it as a child, but I have grown to love it.
