Vegan Quinoa Loaf


Loaf! Quinoa loaf! This is a great addition to a plate of veg or mash and it’s veeeeegan. 

Vegan Quinoa Loaf
3 tablespoons chia seeds
1/2 cup warm water
2 cups cooked quinoa
1 tablespoon olive oil
1 onion, chopped
4 garlic cloves, minced
1 medium carrot, chopped
2 celery stalks, chopped
Salt and pepper to taste
1 can black beans, rinsed and drained
3/4 cups rolled oats
1 tsp basil
1 teaspoon oregano
2 tablespoons soy sauce
1/2 cup tomato sauce
Soy glaze


Preheat oven to 350ºF and grease a glass 9×9 baking dish. Cook the quinoa with veggie stock and set aside. In a small bowl mix the chia seeds and warm water and stir well, then refrigerate for 15 minutes to form a gel.

Chop the onion, garlic, carrot and celery. Warm the olive oil in a pan over medium heat, then saute the vegetables for 4 or 5 minutes.




Combine beans, oats, basil, oregano, soy sauce and tomato sauce in a food processor and blend into a paste. Add the vegetables, cooked quinoa, and chia blend in a large bowl and mix well.




Add the mixture to the baking dish and press firmly into the dish. Top with soy glaze. Bake at 350ºF for about 1 hour and allow to cool slightly before slicing and serving.
