Cheap and Easy Vegan Noodles

Cheap and easy noodles! So cheap, so easy. Using a recipe from the Momofuku book we made our 49 cent Mr. Noodles so much tastier.

Ginger Scallion Sauce

2-1/2 cups thinly sliced scallions
1/2 cup fresh ginger, minced
1/4 cup grapeseed oil
1-1/2 tsp soy sauce
3/4 tsp sherry vinegar
Kosher salt to taste

Mix ingredients together in a small bowl and test salt level, adding more if necessary. Boil water and cook the noodles from 2 packs of Mr. Noodles without the powdered mix.

Using tongs remove the noodles from the water and toss in the ginger scallion sauce. Dump the left over water and add the noodles and sauce back to the pot and heat for several minutes to warm through. Add thinly sliced carrot or bok choy if desired.

Once heated through serve immediately. YUM!
