I was craving Caesar salad the other night and thought it might be nice to make croutons out of an old loaf of my sourdough bread. They turned out really nicely!
Sourdough Croutons
1-1/2 cups of 1″ cubes of this sourdough bread
2 tbsp sesame oil
1 tsp dried oregano
1 tsp dried thyme
Preheat the oven to 400 °F.
Spread the cubes of bread (it can be a stale loaf) in a single layer on a parchment lined baking tray and drizzle the oil over the bread. Sprinkle the oregano and thyme over the bread and put in the oven with the rack close to the top for about 20-30 minutes (or until browned). Gently toss the croutons near the half-way mark.
I made this caesar salad with Earth Island Organic Vegan Caesar Style Salad Dressing and Go Veggie Parmesan Flavour Vegan Grated Soy Topping (both of those product names are so long and weird haha) and some fresh romaine lettuce. I used to eat a lot of caesar salads as a kid because it was usually the only vegetarian thing I could get when we went out. And it’s not even vegetarian all the time because of the anchovies haha. I’m glad the options have improved so much!
