I have been living microwave-free for a number of years now, and loving it. The one and only exception has been microwave popcorn… I miss it like crazy. But I finally learned how to do popcorn on the stove and now I will never look back! It’s easier, tastier and better for you.
Start by heating a small pot with a lid on medium/high heat and adding a large spoonful of coconut oil. Once the oil is melted, add 4 kernels and put the lid on. Wait for the 4 kernels to pop then add 1/4 cup of corn kernels in a single layer in the pan and then remove from the heat and count to 20. Return pan to the burner with the lid on and wait for the popping to start!
Once the kernels start popping, which should be pretty simultaneous, shake the pan to prevent burning. When the popping slows take the pan off the stove and pour the popcorn into a large bowl. I then return the empty pan to the stove to melt a small amount of Earth Balance, and pour evenly over the popcorn. I like to add a pinch of salt and a generous amount of nutritional yeast then it’s good to go.
Seriously so tasty! This method pops every single kernel and it’s all so simple to do. It’s also such a cheap snack; a quarter cup of kernels makes a decent sized serving and it’s also gluten free, vegan, and low in calories.
