Gluten free and vegan ginger cookies!! I was craving sweets the other night so I made up some ginger cookies with chocolate chips and cane sugar and they were excellent. Here’s the recipe:
Vegan Cane Sugar + Ginger Cookies
1/2 cup sorghum flour
1/2 cup tapioca starch
3/4 cup white rice flour
2 tsp xanthan gum
Vegan egg replacer for 1 egg (I used 1 1/2 tsp of egg replacer powder + 2 tbsp water, mixed in a small bowl)
1 tsp baking soda
1/2 tsp salt
1/2 cup vegan margarine
2 tbsp fresh grated ginger
1/4 cup molasses
2/3 cup fine grain cane sugar
3/4 cup vegan chocolate chips
1/2 cup large grain cane sugar
Preheat oven to 350ºF and heat a small pan on the stove over medium heat.
Start by melting the margarine and mixing in the fresh ginger, molasses, and fine grain sugar until smooth and dissolved. In a separate large bowl mix together the flours, xanthan gum, vegan egg, baking soda and salt.
Pour the melted ingredients over the dry ingredients and mix thoroughly. Fold in the chocolate chips. The dough should be firm and easy to roll into balls about the size of walnuts. Pour the large grain sugar into a bowl and roll the balled dough through to coat thickly. Lay the sugar coated cookies onto a parchment lined baking sheet and press down firmly with a fork to flatten.
Bake for about 10 minutes or until the bottoms are lightly browned, then transfer to a cooling rack. Then eat them all because they are delicious! ❤
