Basic Vegan Chocolate Chip Cookies

I’ve been trying to motivate myself to bake again. It has been hard to find my stride with a small baby and I spend most of my day exhaustedly chasing her around, so there isn’t much time left for cookies. I was gifted an awesome new hand mixer for my birthday, though, and I’ve been really excited to start using it! I had a craving for some simple chocolate chip cookies so I broke out my copy of Vegan Cookies Invade Your Cookie Jar (It’s the best!) and made a few batches. This recipe is my favourite to use for vegan cookies as it doesn’t use butter or eggs at all and the ingredients are usually on hand.

Vegan Chocolate Chip Cookies

1/2 cup brown sugar
1/4 cup white sugar
2/3 cup canola oil
1/4 cup almond milk
1 tablespoon tapioca starch
2 tsp vanilla extract
1/2 tsp salt
1/2 tsp baking soda
1-1/2 cup all purpose flour
3/4 cup chocolate chips

Mix all ingredients in a bowl one by one until a dough forms. Hand roll into 24 cookies on two greased baking sheets. Bake at 350ºF for 12 minutes then let cool on a rack.

I have already memorized this recipe and because it takes less than 25 minutes start to finish (and only uses one bowl!) it’s pretty hard to tell myself I don’t have the time. Plus I loooove having a stash of fresh cookies on the counter because I am a junk food snack machine. Enjoy!
