I have been having a hard time balancing my days with a one year old crawling around. She wakes up early, wants to be fed constantly, wants to be entertained, needs changing, dressing, bathing and naps. It’s a full time job and I always seem to find myself looking at the clock at 2pm, around the time Mavis dumps the dog water all over herself again, and thinking I haven’t fed myself all day. By lucky coincidence I arrived home from the store the other day and discovered a huge jar of peanut butter in my bag that wasn’t mine. I had paid for it but didn’t remember putting it in my basket (I’m serving you mom brain realness!) and had no idea how to use such an enormous amount of natural peanut butter.
Inspiration struck in the form of these no bake, veganish, healthy energy balls. I’m in the middle of reorganizing the pantry, another never ending task thanks to constant baby interruptions, and pulled all the ingredients I wanted to put in. I ended up with a pretty tasty and very quick snack! They can be stored in the fridge and grabbed with ease when I find a few seconds to stuff my face.
1.5 cups natural peanut butter
1/2 cup oats (I used an oat cereal with bran flakes and flax seeds because it was on hand)
1/4 cup craisins
1/4 cup chocolate chips
1/4 cup flaked coconut
1 tbsp pepitas (pumpkin seeds)
1 tbsp chia seeds
1 tbsp ground flax seeds
1/4 cup honey (optional but skip it if you are vegan or if you want to share with a baby – no honey for little ones)
Mix everything together and chill in the fridge until slightly firm. Add extra peanut butter if the mix is too crumbly and dry. Roll the batter into balls and keep in a sealed container in the fridge. Easy peasy 🖤
